Millions of people are suffering from the mental abuse and torture of these weapons that are not openely talked about or known, or "declassified."
FOR IMMEDIATE RELEASE

Contact:
Mark Kastel 608-625-2042
Charlotte Vallaeys 978-369-6409

New Report: Many Organic Soy Food Brands
Importing Beans from China

We no longer trust these imports to feed our pets
They have no place in organics

Cornucopia, WI: Tremendous growth in the organic soy foods industry has occurred over the last two decades as consumers seek healthy dietary alternative sources of protein. Many companies touting their "natural" or "organic" soy brands have found favor in the supermarket. A new report, released this week by The Cornucopia Institute, lifts the veil on some of these companies, exposing widespread importation of soybeans from China and the use of toxic chemicals to process soy foods labeled as "natural."

The report, Beyond the Bean: The Heroes and Charlatans of the Natural and Organic Soy Foods Industry, and an accompanying ratings scorecard of organic brands, separates industry heroes—who have gone out of their way to connect with domestic farmers—from agribusinesses that are exploiting the trust of consumers.

Part of the meteoric rise in organic food sales has been built on the expectation from consumers that organic foods support a more environmentally sound form of agriculture and one that financially rewards family farmers through their patronage. "Importing Chinese soybeans or contributing to the loss of rain forests by shipping in commodities from Brazil just flat-out contradicts the working definition of organic agriculture," said Mark Kastel, Senior Farm Policy Analyst at The Cornucopia Institute.

Through a nationwide survey of the industry, onsite farm, and processor visits, plus reviews of import data, Cornucopia assembled a rating system aimed at empowering consumers and wholesale buyers with the knowledge necessary to support brands that respect the fundamental tenets of organics.

"The good news in this report is that consumers can easily find, normally without paying any premium, organic soy foods that truly meet their expectations," said Charlotte Vallaeys, a researcher at Cornucopia and the primary author of the report.

One company that had an excellent opportunity to meet consumer expectations by supporting the growth of organic acreage in North America was Dean Foods, makers of the industry's leading soymilk, Silk. Instead, after buying the Silk brand, Dean Foods quit purchasing most of their soybeans from American family farmers and switched their primary sourcing to China. This cost-cutting move helped them build their commanding soy milk market share using soybeans of questionable organic certification from China.

“White Wave (the operating division of Dean Foods that markets Silk and Horizon organic milk) had the opportunity to push organic and sustainable agriculture to incredible heights of production by working with North American farmers and traders to get more land in organic production, but what they did was pit cheap foreign soybeans against the U.S. organic farmer, taking away any attraction for conventional farmers to make the move into sustainable agriculture,” said Merle Kramer, a marketer for the Midwestern Organic Farmers Cooperative.
And now Dean, the $11 billion agribusiness behemoth and the nation's largest dairy concern, has quietly abandoned organic soybeans in most of the Silk product line, switching to even cheaper conventional soybeans without changing UPC codes for retailers or lowering pricing to consumers.

After reports from cooperative and independent natural foods retailers around the country Cornucopia visited a Whole Foods store in downtown Milwaukee, Wisconsin and found only one of 25 Silk soymilk products was organic. "This is a radical departure by a brand that was widely viewed as an organic market pioneer," lamented Kastel.

Cornucopia's Vallaeys warned: "Health conscious shoppers should no longer associate Silk with organic, and should seek the green USDA Certified Organic seal when purchasing soy products.”

"As a vegetarian, for health and ethical reasons, I am appalled that some large corporations are profiteering on my trust in their brand," said Joan Levin, a Chicago consumer who says she is fiercely committed to organics.

Meanwhile, highly committed companies like Eden Foods, one of the country's largest organic soy foods producers, Small Planet Tofu, and Vermont Soy work directly with North American organic farmers.

“Small Planet Tofu has bought organic soybeans from me and other farmers I work with for the past 17 years,” said Phil Lewis, an organic farmer in Kansas. “This relationship is priceless, because I know that I can count on them even if I have a bad year with droughts or floods,” Lewis added.

“The top-rated companies that nurture relationships with American organic farmers should be rewarded in the marketplace. We hope that organic consumers will use Cornucopia’s soy scorecard when deciding which organic soy foods to buy,” said Kastel.

Some soy food makers that did not participate in the scorecard study may have been hesitant to share their sourcing information because they also buy organic soybeans from China. “Their reluctance to disclose their sourcing information makes sense, given the USDA’s weak oversight of certifying agents working in China,” noted Kastel.

The USDA waited five years before sending auditors to China to examine the practices of that country’s certifying agents. And even when in China, the USDA’s auditors visited only two farms in the entire country. On these two farms, they found multiple noncompliances with U.S. organic standards. USDA auditors also discovered that Chinese-based organic certifying agents did not always provide a translated copy of the U.S. standards to clients who apply for organic certification.

The Chinese findings support concerns that American farmers have raised for years, which is that organic imports from China may not always be held to the same strict standards as American crops. They also raise serious questions about whether Chinese farmers are adequately informed about the USDA organic standards and requirements.

“If the reputation of organic food is impugned through illegal and fraudulent activities in China, and an incompetent level of oversight by the USDA, it will be the domestic farmers and entrepreneurs that built this industry who will be harmed,” added Kastel.

Hexane: The Dirty Little Secret of the Natural Soy Foods Industry

Behind the Bean also exposes the natural soy industry’s “dirty little secret”: its widespread use of the chemical solvent hexane. Hexane is used to process nearly all conventional soy protein ingredients and edible oils and is prohibited when processing organic foods.

Soybeans are bathed in hexane by food processors seeking to separate soy oil from the protein and fiber of the beans. It is a cost-effective and highly efficient method for concentrating high-protein isolates. But hexane is also a neurotoxic chemical that poses serious occupational hazards to workers, is an environmental air pollutant, and can contaminate food.

Residue tests reveal that small amounts of hexane can and do appear in ingredients processed with the toxic chemical. The government does not require that companies test for hexane residues before selling foods to consumers, including soy-based infant formula.

"Consumers who are concerned with the purity and healthfulness of their food should continue to seek out organic alternatives as part of their diet and support the many high-integrity brands outlined in our study," Vallaeys stated.

The full Cornucopia Institute report, or an executive summary, including the scorecard of organic soy brands, can be found at www.cornucopia.org

- 30 -

MORE:

Pacific Foods, another major organic manufacturer, for example, puts a “Certified to the Source™” seal on its organic soymilk packages, yet refused to share with customers and Cornucopia researchers any sourcing information. Additional Cornucopia research of available import databases indicates that Pacific Natural Foods buys hundreds of thousands of pounds of organic soybeans from China. "Obviously, Pacific Foods knows their customers well enough that they felt sharing this information openly with them would not reflect well on their reputation," added Vallaeys.

"When consumers choose to invest in organic food, they think they are choosing a safer and more nutritious product for their families,” said Cornucopia’s Kastel.

Dean Foods has also been the subject of industry scrutiny and USDA investigations for their dependence on giant factory farms, some with over 10,000 animals, producing "organic" milk while violating federal standards.

The Cornucopia Institute, a Wisconsin-based nonprofit farm policy research group, is dedicated to the fight for economic justice for the family-scale farming community. Their Organic Integrity Project acts as a corporate and governmental watchdog assuring that no compromises to the credibility of organic farming methods and the food it produces are made in the pursuit of profit.www.cornucopia.org

I've been paying attention to lists of what to have in a well-stocked pantry - that is, items that can hang around a long time, not needing refrigeration, ready for cooking when you have surprise guests. These tend to be general lists, and as such include meat, dairy and other items that vegans generally agree not to use. At the same time, we tend to cook with ingredients not used frequently in mainstream cooking. With these differences, the question comes to mind:

What belongs in a well-stocked vegan pantry?

I'll start by listing three (as a long list kills the thread almost before it's born; and I'm a bit impatient to list just one ingredient at a time ):
Whole wheat pasta
Canned tomatoes
Corn meal

4 egg whites; at room temperature

I wasn't eating very healthily so I went back to vege. Second time I had better success, but I've since fallen off and gone back to vegetarian. The thing is, I love those veggie burgers and they have egg/milk in them. Cookies are also a yummy problem.

Do you have any recipes for those yummy problems of mine? I absolutely love the Morningstar Farms black bean veggie burger. Any ideas how to make one?

As far as cookies, yes, I know oreos are vegan (which is creepy if you think about it too much). Any other options?

Any idea on how to make the transition a bit easier? I find that many of the things I eat have hidden egg/milk; such as flatbreads or pitas, pasta. Generally grain type stuff.

as a young boy i'd go with my father down to the pier to catch crabs. after that we'd go pry mussels of the rocks at low tide with a crowbar. on the way home we'd stop at the local fish monger to pick up some scallops. we'd stop in at our neighbors house, an old retired teamster, to pick up some home grown tomatoes, fennel, and onions. when we'd get home somehow my dad transformed it all into cioppino, and italian seafood stew. that is the only thing i deeply miss from my omnivore days, and i'm proud to say i've figured out a vegan version.

i went to the shore at a super low tide, and collected 3 varieties of seaweed (sea palm, sea sac, and boa kelp). so ya, here's what i made.

1 large can stewed tomato (fresh if you've got em in yer garden)
1 large fennel bulb
1 large onion
3 Tbs mushroom sauce (you can find this at asian markets. if you cant find it, go ahead and use real mushrooms)
3-4 cloves of garlic
2-3 bay leaves
2 Tbs crushed red peppers
1 Tbs sea salt
black pepper to taste. i don't like much so add very little
2 tbs thyme
2 cups water
1/2 -1 cup red wine
olive oil (you decide how fatsy you want it to be)
1 package of firm tofu
a pound or two of fresh seaweed (if you can't get to the shore at low tide asian markets often sell it fresh in the refrigerator section)

keep in mind that seaweed should be washed fairly well to remove any funk and/or sand.

put the onion, fennel, and garlic in a food processor and pulse it until its all been chopped up. the idea is super small bits, not a liquid. over a medium high heat add some olive oil, your chopped veggie mix, red peppers, thyme, salt, and bay leaves. when the veggies become soft add water, wine, mushroom sauce, tomatoes, tofu, and seaweed. cover and let simmer for about 30-45 minutes. serve in a big bowl with plenty of crusty french or sourdough bread.

if anyone has any ideas on how to make this more authentic let me know. it's a bizarre passion of mine.

"There is no direct link on their website as this is happening so fast. The best thing to do is to email them directly at info@animalplace.org .
Here was the message I was sent:

Dear Kathi

Animal Place is helping to rescue 1,500 "spent" hens from a small egg-laying factory farm. They are scheduled to be slaughtered next week. These birds have spent their entire lives in cages and are killed at the young age of two.

How you can help:

Adopt! Animal Place can only house 300 birds at our facility. We want to save more. If you have space for companion birds now or in the near future, contact us immediately. If you know people who might wish to adopt chickens as companions, forward this alert to them.

All prospective adopters will be asked to fill out an application as we want to ensure these abused birds go to safe and permanent homes.

Send us an email or call us at 707-449-4814 with the following information:
Name:
Phone Number:
Full Address:
Number of hens you can adopt:
When you can adopt birds:

Donate to our rescue fund. Taking in hundreds of animals is both time consuming and costly but it is one of the key reasons Animal Place exists. By donating to our rescue fund, you provide a gift of veterinary care, food, transport of animals and housing.

Every year, 250-300 million hens are slaughtered at 2 years of age because their egg production no longer matches the bottom line of money and greed. Currently, 95% of all birds raised for their eggs are housed in cages so small they cannot turn around. Even when not housed in cages, cage-free birds are still debeaked and slaughtered long before their natural lifespan. You can do your part by not purchasing eggs and seeking alternatives for your baking needs by using flaxseed, applesauce, or Ener-G egg replacer. Boundless substitutes are readily available. "
I have heard from various places that soy products can interfere with your thyroid if you have problems with it. I take kelp to help regulate my thyroid so I kind of try to avoid soy milk and such (though I love my chix patties).

almond low-carb tofu cheesecake

Sweetener notes:
Be careful using stevia, too much can be bitter. This recipe is based on a liquid stevia sold in a tincture bottle. Taste after each addition of a 'squirt' to make sure it's not getting bitter. Adding more rum extract or more almond extract might help mask the taste if that happens, or you may have to 'water it down' by adding more tofu and making a bigger batch.

Agar is a vegetable gelatin (made from seaweed). If you're using agar powder instead of flakes, you'll need MUCH less.

Preheat oven to 350F

Ingredients:
Crust:
1.5 cups almond meal
1/4 c (or more ?) melted coconut oil
1/2 teaspoon almond extract
a squirt of liquid stevia extract

-blend crust ingredients together by hand or in food processor. Press into 9" pie pan.

Filling:
1 pound firm tofu
3 squirts of liquid stevia extract
1/2 teaspoon almond exact
1 tsp vanilla extract
1 tablespoon tahini OR almond butter
2 tablespoons lemon juice
1/2 teaspoon lemon zest
2 TB agar flakes softened in 1/4 c water first
1/2 tsp baking powder

Blend filling ingredients in food processor or blender until smooth (30 secs). Pour mixture into crust and bake until top is slightly brown, about 30 minutes, or until knife inserted in center comes out mostly clean. When cooled, top with:

almond-rum topping:
-1 cup almond herb tea (celestial seasonings or some other flavored herb tea)
-1 cup sliced almonds
2 squirts of liquid stevia
shot of rum or 1/4 tsp rum extract
1/2 tsp almond extract
1 tsp vanilla extract
1 TB almond butter
2 TB (I think) agar flakes
simmer almonds in herb tea with stevia, rum, almond, and vanilla for a few minutes so they get softer and so that alcohol boils away from rum
add almond butter to make creamier topping
sprinkle agar flakes into the pan and simmer for a few more minutes till dissolved. It'll set a bit when cooled.

OH MY GOD was I happy i tried it.

recipe below. so easy and so healthy. for the lazy vegans among us, used canned BEP instead of dry.

Ingredients
1/2 c dried black-eyed peas
2 1/2 c water
1 1/2 lb kale, finely chopped - you can substitute spinach and/or add swiss chard
1/2 c coarse bulgur wheat
1 c diced onions - (sorry manu!)
1/2 c olive oil

Directions
Wash and drain black-eyed peas.
Place black-eyed peas and water in saucepan, cover and cook over medium heat for approximately 15 minutes.
Add chopped kale and cook for 6 minutes.
Rinse and drain the bulgur wheat and add to the saucepan.
Stir to mix all ingredients.
Drain in colander to remove any liquid.
Brown onions in olive oil in large frying pan until dark brown.
Add the drained mixture of kale, peas and wheat with salt and pepper to taste.
Cook over low heat, uncovered for 5 minutes.
Enjoy.

It is difficult to impossible to clean the little holes with ordinary cleaning methods. This is a nuisance and a problem that has been discussed previously.

I have found an answer for cleaning the Soyajoy filter basket.

Spray the stainless steel filter basket with Easy Off oven cleaner. Then let it set for 15 minutes to an hour or so. It worked perfectly for me. I didn't let it dry out after spraying it with the Easy Off. Then I just flushed it with clean tap water.

Out of curiosity, I had deliberately let the filter clog up, in order to see what would clean it, other than the over-priced tiny pack of chemical cleaner that SoyaJoy sells by mail! I first tried liquid dish washing detergent. That didn't work. Next I tried "toilet bowel cleaner with Clorox" ... and that didn't work. But when I tried the Easy Off oven cleaner, that worked like a charm. :>)

I'd like to give my little guy the best karmic gift possible: a harm-free diet while he's in the womb and certainly once he's out. But, oh, the cheese! and the sour cream! And the food from the Indian restaurant! Help!

I think I need some A) enCOURAGEment and B) good yummy recipes that will entice my palette. I'd especially like to hear from any other vegan moms/moms-to-be.

I have a new survey online looking at people's accuracy in personality perception, and asking people about their attitudes related to various issues surrounding food. We've been having trouble finding enough vegans/vegetarians here on campus (which is really important for the part on attitudes toward food), so I thought I'd post here :) Anybody can take the survey, but it's veggie folk we really need right now.

It takes about 15 minutes to complete, is completely confidential, and doing so enters you into a drawing for $200 CAD.

It seems like I make the same dishes every week - So I thought I'd ask if anyone would like to share one of their routine meals (yummy, easy and w/ recipe) - If enough of us do this we could add another few recipes in our weekly dining repertoire. Thx

So mine is a pasta dish I got from someone on this tribe (I forgot whose this is - If it's yours take the credit)
Cook favorite pasta according to package
Drain
Add a chunk of EB into the pot to melt (enough so it's wet but not drippy
Add a splash of Braggs snd Sesame oil (enough so it's wet but not drippy - according to taste)
A bit of kosher salt
A clove or two of garlic
Toss in a handful (more or less as desired) of toasted sesame seeds
And wonder of wonders dinner is ready

You can also add tons of stuff to this for variety - If you make enough is makes great leftovers. Super easy

I've been experimenting on a recipe to make garlic bread that has a delightfully gooey layer of garlic goodness on top.

So far, I've tried mixes with using nayonaise, tofutti cream cheese, and some vegan gourmet monterey jack cheese to create the goo-factor with some success. Has anyone perfected a sumptuously gooey garlic bread or have suggestions on making this even better?

My process so far:

Take a loaf of French bread and slice it into 1/2-1" slices. Spread with earth balance and set aside.
Slice off pieces of the vegan jack cheese 1/8" thick to fit bread slices. Arrange on bread slices.

Take a few 1/8" slices of the vegan jack cheese and chop into little cubes.

In a small skillet, take some olive oil (as little as possible to do the following) and throw in 2 tsp dried oregano, 1 tsp dried basil, 1 tsp dried parsley, 1/2 tsp Hungarian paprika, 1/2 tsp ground pepper, 1/2 tsp onion powder, a pinch of salt, and a pinch of nutmeg. Sauté finely chopped garlic (amount as desired, for me 6 large cloves). Turn off heat once satisfied with the results.

Then stir in a mix of 1 part nayonaise to 2 parts tofutti cream cheese until desired consistence is reached. Cover the slices of bread with the mixture. Sprinkle on the little cubes of jack cheese and then sprinkle on some more dried parsley.

Broil in a convection oven/toaster oven/oven until top is bubbly and bread is just beginning to brown. Enjoy!

Thanks!
don´t want to spoil the party, but I´ve been working with bio diversity for the past 15 years, and there is not many things as terrifying as Soya!
PLEASE!!!! move to rice milk!
If more people would start asking for rice milk than places would start offering it as an alternative.
To make a long story short so Soya is the one thing on earth which is right now 100% genetically patented.(meaning all the soya you would ever get is exactly the same... which makes you allergic, which prevents farmers to be able to market it freely without huge co operations, which creates mega weeds and kills insects...wheat is the next, 90% patented).and organic soya is not less patented.
Also Soya is a monoculture, it has pushed the desert line in Mexico lower and lower (not reversable) and is now turning the rainforest into a desert (apart from deforestation for growing soya, also as it is genetically manipulated by default, it "preserves" the fields and no other crop can grow there after).
first link I came up with was http://www.rainforests.net/therapeoftherainforest.htm but there are thousands, please contact me if you want any more information.
If you are Vegans in order not to tortures cows (which I am) is cutting trees and damaging bio diversity your option?
and if you are Vegan for health reasons
Soya might have full protein but"
It contains high quantities of various toxic chemicals, which cannot be fully destroyed even by the long cooking
process. These are: phytates, which block the body's uptake of minerals; enzyme inhibitors, which hinder
protein digestion; and haemaggluttin, which causes red blood cells to clump together and inhibits oxygen
take-up and growth. Most controversially of all, soya contains high levels of the phytoestrogens (also known as
isoflavones) genistein and daidzein, which mimic and sometimes block the hormone oestrogen. "
http://news.bbc.co.uk/1/hi/health/4115506.stm

Okay. so we've all had the spanakopita (or greek spinach pies) often made with spinach and feta (BOOOO!)

so of course I could just post a recipe of spinach pie...but how would that impress you wonderful people? not much. we are a sophisticated crowd after all. :-)

so here we go with a triple decker phyllo pie with mushrooms, sweet potato and greens.

which I call a Winter Phyllo Pie

you will need:
1 lasagna dish
1 food processor
1 pastry brush
pots and pans

one large bunch swiss chard
one package frozen spinach
three medium sized sweet potatoes, cleaned, sliced about 1 cm thin, unpeeled
about 1 pound mushrooms (cremini are the best but the regular white ones will do too)
1 large yellow cooking onion
1 package of extra-firm organic tofu ( I use nigari tofu)
braggs or soy sauce
basil
freshly ground black pepper (optional)
sea salt
nutritional yeast
tapioca flour (about three tablespoons)
1 package phyllo pastry.
coconut oil (and/or earth balance)

first in a large covered sauce pan on a medium heat pop in the cleaned and very roughly cut up swiss chard (I just rip it in big chunks with my hands ;-) with a little bit of water (not to much, just so that it doesn't burn, about 1/8 cup. cover...and allow to cook for about 10 minutes. add frozen spinach and cover again for another 10 minutes. then shut off heat and let sit.

place the sliced sweet potatoes in the oven on a cookie sheet at 350 F for about 30 to 45 minutes or until soft and a bit dry.

chop up the mushrooms not too fine, in about 1 inch chunks (doesn't need to look pretty just chopped ;-) Chop the onion.
In a large saucepan or wok on a medium high heat, toss in about a teaspoon coconut oil and the onions, when they turn translucent add the mushrooms, and mix well, cover. reduce heat to medium. When some liquid starts to appear (about 5 minutes) add some braggs (or soy sauce) to taste and some basil and pepper if you want. cover again and lower heat to medium low. after about ten minutes, take about 1/4 cup of liquid from the wok and mx in a small bowl with 3 tablespoon of tapioca flour. turn off heat and pour the tapioca flour paste into the mushroom mixture. mix very well.

in a large bowl crumble the tofu very well. Add about three tablespoons of jnutritional yeast and a teaspoon sea salt. mix well. add a tablespoon coconuty oil and mic very well.

take the now cool spinach and swiss chard mixture, drain of most of the liquid (drink this liquid it makes an amazing soup!) and process in a food processor. add to tofu, and mix very well.

now comes the fun part.

for easy assembly all the fillings should be cool or room temperature at least.

heat some coconut oil... just a little to melt...or some earth balance or both (about a cup to be safe, but you probably won't use it all)

and in a lasagna dish place the phyllo dough. I like glass dishes for this, but any square or rectangular dish will do.
this is what I like to do.

take the pile of sheets and open it. brush coconut oil (or earth balance) on the top sheet then fold it gently over itself. then oil the folded side. place the oiled side down in the lasagna dish. then brush oil on the second side. and then repeat. put about four sheets underneath.
and three sheets between each layer, and four sheets on top.

and its just 4 sheets,
mushrooms,
3 sheets,
sweet potatoes (you can put garlic or thyme on the sweet potatoes, but they taste fine by themselves) just layer them well and as close to each other as you can.
3 sheets.
greens and tofu
4 sheets.

and even if you used only coconut oil, a reccomend earth balance for the top layer. just to make it more golden.
a bit of soy milk will work too.

bake at 350 for about 30 minutes or until golden.

enjoy.

variations: you can make a white sauce with a bit of nutmeg and pour it on top of the spinach (just make sure it is nice and thick)
you can also make a sweet red pepper and garlic sauce for on top of the sweet potato.

oh and resist the urge to cut it up right out of the oven, for it to taste (and look) great allow to cool for about 30 minutes before you cut and serve

Hallelujah Diet - Drawing in religious mainstream crowds!

Teehee..... K, now I'm not religious, but when I went to log in to Yahoo this mourn, on the front page was this video talking about a 72 year old preacher who is drawing crowds in by the hundreds to his seminars. They don't really come to see him Preaching about God, per say, but to see him talk about Vegetarianism! Like wow eh!.... He says people should all go back to the way that God directed them to eat in Genesis. He runs around the room full of energy talking about Vegetariansim. He was diagnosed with having a tumor when he was 42 and changed his diet.

He preaches about "How to Eliminate Sickness". Reverend George Malkmus tells his followers how he healed his own colon cancer and other diseases more than 20 years ago. This is what is attracting people to his seminars. Yeay.... I say go for it! Wake up america!

Of course I am pagan / pantheist, and not into dogmatic religion AT ALL, but to have mainstream Americans start changing their diet as a whole is good ya?
thoughts on calcium? it's my understanding that calcium cannot be absorbed by the body via standard supplementation, only through food. i can't remember where i read this claim.

i have done some googling and haven't been able to verify this claim. it wouldn't surprise me that it were true--i have somewhat of a dim view on the entire nutritional supplement industry.

has anyone heard anything similar to this?

what do you do to make sure you get enough calcium? do you think the requirements out there are too high or make sense? looking at the vegan foods that can provide calcium, it seems truly difficult to get enough based on the requirements i see from the RDA list.

Please pardon the cross post, but this time there is still time for you to act to stop the FDA before they enact this bad idea:

Citizens for Health has joined with the American Herbal Products Association to oppose the irradiation of dietary supplements

Citizens for Health supports AHPA's opposition to this petition on the following grounds:

Proper handling of dietary supplements under current good manufacturing practice is usually sufficient to ensure that they are not subject to microbial contamination that presents any risk to the health of consumers of these products
If approved, the use of ionizing irradiation on herbal dietary ingredients will mask one of the factors that is currently relevant to the determination of ingredient quality, since information about microbial levels and the presence of pathogens or yeasts and molds at any time during the handling of a treated ingredient would be lost. Of particular concern are pathogens, since even if pathogenic organisms are eliminated through irradiation, pathogenic by-products such as endotoxins or exotoxins may remain in the material
Irradiation is currently allowed in the United States for eleven food categories, and in proposing that the limitation of ionizing radiation for dietary supplements be established at 30 kGy, the petition is suggesting that this limit be from 3 to 30 times higher that is currently allowed for all but two food categories. Dietary supplements may be consumed in quantities of several grams per day. Thus, dietary supplement consumers will be exposed to much higher levels of any material changes that occur in a supplement’s or ingredient’s characteristics or in its consequences of use, if any, as a result of the irradiation.

Send your letter to the FDA now!
the idea is that the USDA is going to require that all greens be *pasteurized* prior to sale (first almonds, then leafy greens, this is crazy!!!)~and "pasteurize" is often a euphemism for "irradiate".

please follow the instructions below or call your senators and representatives directly to voice your opinion--the public comment period ends TODAY. yikes!
Protect Fresh Leafy Greens and Family Farms
Federal Regulations Would Harm Sustainable Farmers and Biodiversity

We need your help in another battle to stop the slippery slope toward a sterilized and industrialized food system that threatens biodiversity and the very existence of family-scale farms that grow food in a safe, healthy, and environmentally sustainable way.

In response to the E. coli 0157 outbreaks last year in bagged spinach, the USDA is considering a change in the federal regulations that could potentially require growers of all fresh leafy green vegetables to follow specified guidelines in the fields and during post-harvest handling. The federal rules would be similar to the California guidelines that were set by large-scale operations after the outbreaks. The guidelines include growing practices that discourage biodiversity and sustainable/organic farming practices, deplete soil fertility, and create "sterile" fields—methods that have not been scientifically proven to actually reduce E. coli 0157 bacteria but are certain to reduce biodiversity, harm wildlife, and burden family-scale farms.

Small- and medium-scale farmers would bear the greatest financial and logistical burden of such specified guidelines. For example, if the rules require testing for pathogens at every harvest—as they currently do in California—then large-scale farms that grow one type of crop and harvest only one to three times per season would pay much less than smaller and more diverse farms that continually harvest many types of vegetables. If regulations dictate a single set of growing practices and food safety measures, which are appropriate for large-scale "factory farms" but not for diverse family farms, we risk losing the very farms that grow leafy greens in a healthy and sustainable way. A one-size-fits-all regulation will not work!

The rules threaten biodiversity and environmental sustainability in several ways. Farmers would be encouraged to eliminate wildlife and any vegetation that may provide habitat for wildlife. The rules also discourage the development of microbial life in the soil. These methods have not been shown to reduce the risk of harmful bacterial contamination. In fact, sustainable farming methods that promote microbial life in soil have shown to reduce E. coli 0157 because it has to compete with other microbes and is therefore less likely to thrive. However, the aim of these rules seems to be for sterile fields that support no forms of life, except for the leafy greens.

We must make our voices heard, telling the USDA that we do not support federal rules that would put a great financial and logistical burden on family-scale farmers, discourage environmentally healthy ways of farming, and harm wildlife.

Taking action is easy, but with a December 3 deadline for submitting comments to the USDA, we need your help today. Please tell the USDA that food safety is an important concern, but that mandating measures with no scientific basis that will put small farmers out of business, and harm wildlife, is not the way to go.

Please submit your comments today by downloading the sample letter below or writing your own message and posting it online (see instructions below), or faxing it in. The USDA is specifically asking citizens to comment on its plan to implement these rules, and it's important that you tell the USDA that you want to ensure access to fresh, leafy greens and that you oppose a Marketing Order or Marketing Agreement that would impose federal standards for all growers of leafy greens. Remember that every comment counts, but individualized messages/letters carry more weight than form letters.

1) To submit online:

Go to www.regulations.gov. In the middle of the screen, you will see "Search Documents."
In Step 1, choose "Documents with an open comments period"
In Step 2, choose "Department of Agriculture"
In Step 3, choose "PROPOSED RULES"
In Step 4, choose "Docket ID" and then type in "AMS-FV-07-0090"
Hit "Submit."
Next, you will see a column titled "Comments, add/due by." Click on the tiny tan dialogue icon, and you are now ready to submit your information and your comment.

2) To fax: (202) 720-8938.

** Please make sure that your letter references Docket Number AMS–FV–07–0090.

In addition to the Cornucopia website more information on this matter is available by visiting the California-based Community Alliance for Family Farmers' website at www.caff.org/foodsafety/. We thank CAFF for their diligence on this issue.

I think I will try this one as soon as I have a chance.

"Classic Pancakes

3 Tbsp. melted non-hyrogenated margarine or vegetable oil
3 Tbsp. vegan sugar
1 1/4 cup soymilk
1 1/2 cups flour
3 shakes nutmeg
1 3/4 tsp. baking powder
dash of salt
1 Ener-G Egg replacer (or other egg replacer equivalent)

Directions
Combine all dry ingredients (flour, salt, vegan sugar, baking powder, nutmeg). In a separate bowl, combine wet ingredients. Make a well in the flour, and pour wet ingredients in. Mix, but don't stir too much. Pour onto hot skillet, flip once. Makes 6 medium pancakes.

I have a lot of fun with this recipe. You can eliminate the nutmeg and make fruit pancakes. Mash up one banana and add at the end, or add apples, applesauce, cinnamon, and raisins, or even add blueberries. It all works, we eat different pancakes every day. Also, try adding a teaspoon of cinnamon with 1/2 teaspoon of orange zest, topped with manderian oranges. "

Serves: 6 pancakes

Cranberry Hemp Quinoa Salad
1-1/2 cups water
1 cup quinoa, rinsed
1/2 cup hemp seed nuts
1/2 cup chopped flat-leaf parsley leaves
1 large carrot, coarsely grated
1 small red bell pepper, chopped
1/4 cup each: cranberries, pepitas (raw pumpkin seeds)
DRESSING:
2 tbsp each: hemp oil, fresh lemon juice
1 tsp light soy sauce
1/2 tsp honey
Salt, pepper to taste
In small saucepan, bring water to boil over high heat. Add quinoa. Cover. Reduce heat to low; simmer 15 minutes or until water is absorbed and grains are tender-firm. Remove from heat. Let stand 5 minutes. Fluff with fork. (Makes about 3 cups.)
In mixing bowl, combine quinoa, hemp seed nuts, parsley, carrot, red pepper, cranberries and pepitas.
For dressing, in small bowl or measuring cup, combine hemp oil, lemon juice, soy sauce and honey. Season with salt pepper. Whisk well. Pour over quinoa mixture; mix well.
Let stand at least 30 minutes to let flavours develop. Serve at room temperature or refrigerate until chilled and serve cold.
Makes about 5 cups.

I'm seriously all about nutrition. Did you know shelled hemp seeds are crazy high in protien, fiber & Omega 3's 6's & 9's? It's true! Check it out on CNN:

While im all for the freedom of speech and what have you I gotta put my foot down as i did create this thing :).

So here we go -

This tribe was created for people to share ideas and tips about cooking vegan food. Simple, eh?
This is NOT the place to discuss what is vegan what is not vegan, if your cat is ok being vegan etc. This tribe is from the general understanding that you are a tree hugging hippy who like eats dirt and leaves and wants to share other dirt and leaves recipies with random interweb folk...

Also, i dont spend every moment on line (at least thats what i tell my manager) so i dont have time to read every single post. so PLEASE EMAIL ME if someone is being a turd... I promise to do my best to look at the situation and see what is the fair thing to do.

This is also not PETA so any hippy vegan flags will get deleted. Were all friends here who like to cook, right?

Lets stick with the basics folks.

Seriously... what should i eat for dinner tonight? First one to answer gets an egg-replacer, soymilk, vegan sugar, cookie (which i swear to you taste as good as a regular one... *cough*).

(I should say I generally don't go in for strictly measured amounts, just chuck it all in, I promise it will be fine)

Ingrediants:

*2 o' dem big bars of chocolate

*vegan digestive biscuits

*1 packet silken tofu

*peanut butter

Equipment

*baking tin with a removable base

*Blender

Method

Melt one of the bars of chocolate.

Mash up the digestive biscuits, as many as you think you'd need to cover the base of the tin (you can always add more if it's not enough).

Mix the melted chocolate in with the biscuit bits

spread over the base of the baking tin

thickly spread peanut butter over it

Melt the other bar of chocolate

Blend the tofu with the blender and add the chocolate

Once it's got to a good, creamy consistancy, pour it into the tin over the peanut butter

Refrigerate for a good few hours

Yum!

The legend that one hundred odd English men and women who landed at Plymouth Harbor feasted on turkey and all the trimmings is a myth. When they first arrived, on November 11 1620, the settlers had so little food that they raised the houses of the Native American inhabitants and made off with stores of beans and corn. There was simply no animal flesh to be had.

It is likely that the first Thanksgiving would have had to have been a vegan one, consisting of corn and beans served on pottery that the so-called Pilgrim Fathers stole from the so-called Indians. If, instead of the Plymouth Pilgrims, we go back a decade or so and look to the Jamestown colonists to provide us with role models for Thanksgiving, we will be even more scandalized. In her book Settling with the Indians, Karen Kupperman tells us that the Jamestown colonists were so lacking in farming skills (they spent most of the time digging random holes in the hope of finding gold) that they sank so low as to feed on corpses that they dug up from Native American gravesites. By rights we should be commemorating Thanksgiving by eating corpses. On second thoughts, isn't that exactly what we're doing?

The Real First Thanksgiving?

The folklore taught in schools has it that the Pilgrims originated the Thanksgiving festival and that they provided the Native Americans with a feast they had never seen. In fact, the opposite is true. In November 1621, one year after the Pilgrims arrived in Plymouth, the Pilgrims celebrated harvest festival jointly with the Native Americans-a harvest festival that the native inhabitants had been celebrating for hundreds, perhaps thousands of years. Most of the food at this festival was supplied by Native Americans. It was a meal that the Pilgrims had never witnessed, consisting of native American foodstuffs. The main meal was a sort of corn meal mush along with nuts and fruits such as gooseberries, strawberries, plums, cherries, cranberries and a groundnut known as the bogg bean. Popcorn and popcorn balls made by the Indians with maple syrup were served as a sweet. There was a variety of breadstuffs such as cornpone, ashcakes, and hoe cakes, made by Native Americans from their own recipes. It is also possible that other native foods such as pumpkin and squash were served. In his Food Encyclopedia, James Trager tells us that there is a live possibility that turkey wasn't even served. It's true that the Indians provided some deer meat, and game birds, but they were side dishes and not the focus of the meal. So the 1620 Thanksgiving dinner proper in 1620 was probably a totally vegetarian one, because the Pilgrims were unable to find animal flesh. The second Thanksgiving in 1621 was also catered by the Native Americans. Not only was it probably turkeyless, but it was mainly vegetarian. Doesn't it make more sense, therefore, that instead of celebrating Thanksgiving as an orgy of Turkey slaughter, Americans should celebrate a vegetarian harvest festival?

Hi! My Friends are having a Wedding this weekend 7-7-7 and I know it's late but I am looking for a recipe to make a cake for them. The groom does not eat sugar, wheat , or cocoa due to candida (though he does eat honey). Does anyone have any delectable recipes they can share for this special occassion? Any direction would be appreciated! Thanks!

Hi all, thought I'd share this ... http://www.ellenskitchen.com/recipebox/glutpast.html ... it's a fab recipe for slicing pastrami style seitan which is oven baked, it makes a gargantuan sausage ... ooh err, no pun intended folks!! I've made it a couple of times now and it's totally deelishamungous!! I did fiddle with a couple of the ingredients, couscous instead of bulghar wheat and I used mustard seeds rather than powder plus I threw a tsp fennel seeds as well for extra texture and flavour. Awesome in sandwiches or as a vegan pizza topping ... yummy!!!

I also made seitan corned beef last night, courtesy of http://www.lanternbooks.com/excerpt.html?session=af8421696df87a82431ddb0b6fe0a74a&cat=15&id=1590560876&expid=491 which is interesting and rather tasty too, although the pastrami is my fave.

Is there anything similar, that doesn't have much sugar?

It'd be especially cool to have a recipe for something I can make at home.

I don't think I get enough protien, and I'm trying to build muscle tone (and it'd be good for camping and stuff)

Anyone know anything? I don't like just eating nuts by themselves It gets kind of tiring.

The Magical Loaf Studio allows you to create custom vegan loafs/bakes using pretty much any storecupboard ingredients you have to hand ... just fill in the tick boxes of your chosen ingredients and it creates the recipe for you, including weights and measures, instructions and cooking times ... you can even give your loaf a name ... awwwwwww, very twee!! Clever I thought, I shall give it a go myself this week.
