I'd like to do a vegan version of this Southern classic, and have found many vegan alternatives for the pudding part, but haven't been so lucky with the meringue. Most vegans just leave it off, but I'm hoping you guys will have a suggestion. Here's the trad recipe with eggs:
4 egg whites; at room temperature
5 tb sugar
1/4 ts cream of tartar
1/2 ts vanilla
I did find a vegan whipped cream recipe (from coconut milk) that I could use instead, but I"m hoping to bake the whole thing.
