Someone gave me this website at a dinner a while back. I haven't had time to check it out but maybe someone else here will.

"Classic Pancakes
3 Tbsp. melted non-hyrogenated margarine or vegetable oil
3 Tbsp. vegan sugar
1 1/4 cup soymilk
1 1/2 cups flour
3 shakes nutmeg
1 3/4 tsp. baking powder
dash of salt
1 Ener-G Egg replacer (or other egg replacer equivalent)
Directions
Combine all dry ingredients (flour, salt, vegan sugar, baking powder, nutmeg). In a separate bowl, combine wet ingredients. Make a well in the flour, and pour wet ingredients in. Mix, but don't stir too much. Pour onto hot skillet, flip once. Makes 6 medium pancakes.
I have a lot of fun with this recipe. You can eliminate the nutmeg and make fruit pancakes. Mash up one banana and add at the end, or add apples, applesauce, cinnamon, and raisins, or even add blueberries. It all works, we eat different pancakes every day. Also, try adding a teaspoon of cinnamon with 1/2 teaspoon of orange zest, topped with manderian oranges. "

Sun, November 11, 2007 - 5:23 AMWhen I make pancakes I don't bother with the egg replacer or baking powder. If you use self raising flour they'll go nice and puffy without them :).
I can also recomend using flavoured soya milk in them. I bought some vanilla soya milk by accident once and used it for pancakes and it was amazing! -

Or at least, that's what wikipedia says

mix together:
2 Med. Bananas
3 tablespoons milk alternative of your choice (vanilla flavor is super yummy)
1/2 tsp cinnamon
2-4 pieces of bread depending on size~
cook like normal french toast!
