Canned beans vs. dried beans

I'm just curious if anybody knows if there is a big difference between using canned beans or starting with dry beans? I don't usually plan enough in advance to soak and cook beans, so I usually use canned (I do drain and rinse them, which I've heard reduces the sodium content). So, am I cheating myself nutritionally, or is always using canned beans alright?

    Hi Susan...

    Fiber and protein are the same in both. I used canned beans for years and years because it just seemed like such a HUGE hassle to make them from dried. But now that we've made the switch, I can tell you that the TASTE is so much more enjoyable when you make them from scratch. Sitting in those cans must change them somehow -- well, I guess I might get a bit cranky if I was smooshed in a dark can with no air!! ;O)

    Anyway, I believe that canned goods are truly fabulous in a pinch. But if you're going to be eating them on a regular basis (which you should strongly consider if you're vegan) then you might want to figure out how to work the soaking and cooking into your schedule. Which honestly is extremely easy once you figure out how to do it.

      also the dried beans soaked are live, and better for you. the proof of that is that they sprout, and canned beans can't sprout.

      what you can do is once you've soaked them and they have absorbed all they can, rinse them and drain all the water and let them sit another few hours in the bowl, until they sprout, then if you cook them by flash boiling two minutes and then steaming for the rest of the cooking time (medium low to low heat for half an hour or a bit more covered, then letting them sit in the covered pot with the heat turned off for an hour or so) the nutritional value will stay in the sprouted beans, they will taste better and fill you up much more....

      not sure about the gas value though ;-)

      I agree with Sassy. I have recently started cooking dried beans in a pressure cooker. They tast so much better than the canned. They are a better consistency too.

      I am not a very good planner, so I usually don't soak them first. It is amazing how fast and easy the pressure cooker is.

    I adore dried black beans, and as I'm not much of a planner and quite scatterbrained, I never EVER soak them first. They just need 30-45 minutes to cook and they're fine :)

    Can I add this: if you do want to soak them, soak them in your left over fairtrade coffee! Absolutely delicious!

      If you forgot to soak the night before, or simply don't have all day, here's another option. (great for white beans, red beans, pinto etc.)

      Cover the beans with cold water in a large cooking pot. Bring to a boil. Then turn off heat, cover, and let sit for an hour.

      Now, some say to drain this water and add fresh here, but I never bother. Just turn the heat back on and cook as usual. You can add any veggies and seasonings you want at the beginning, but don't add salt til the beans are done.
