I seem to have gotten overzealous in the banana department. I have 4 bananas screaming to be made into bread, and no vegan banana bread recipes. Any favorite nominations?

Re: Wheat free banana bread?
Sun, May 9, 2004 - 3:49 PMI don't know any banana bread recipes, but what I like to with overripe bananas is mash them up really good with a little bit of vanilla then throw them in the freezer. I makes for a tasty treat especially this time of year. -

Re: Wheat free banana bread?
Sun, May 9, 2004 - 6:00 PMIt seems so unfair to ask the bananas and the Soy Delicious to compete. They really belong in separate categories! :) -

Re: Wheat free banana bread?
Sun, May 9, 2004 - 6:54 PMIt's not really like they're competing. They're totally different, even frozen. The bananas fall under the Do-it yourself thing. Besides, Rice Dream takes the cake. Mint carob...yum! -

Re: Wheat free banana bread?
Mon, May 10, 2004 - 8:56 AMI don't think Rice Dream would fly around here. The better half is an omnivore, and quite picky about the texture of vegan "substitutes." Soy Delicious has been approved of, and I don't want to mess with it! -

Wed, May 12, 2004 - 7:23 PMIf you have a better half to worry about that makes things different. -

Re: Wheat free banana bread?
Wed, May 12, 2004 - 9:01 PMYeah, frozen dessert is the key to the survival of humanity, and I forgot to get any today at the store. So if you don't see any more posts from me you know why.

i picked a simple non-vegan banana bread recipe from the internet (no idea which one anymore, there are thousands out there), then just substituted ground flax seed for egg and soy for milk, and it was excellent.

Re: Wheat free banana bread?
Sun, May 16, 2004 - 7:23 AMher is my favorite banana bread recipe. You can also make it in to muffins if you would like too.
2 Cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
cream together
1/3 cup maragarine
3/4 cup brown sugar
Beat
1 cup bananas
mix
3 Tbsp soymilk
1 tsp vanilla
add liquids to bananas then stir in flour. oven 350 bake 45 - 50 minutes in a oiled pan.
So you can use variations like adding chopped walnuts is good or chocolate chips and make monkey bread or muffins. If you are into the real healthy stuff I have used the nonhydrogenated margarines and sugar replacer like sucanat or organic brown sugars ,date sugar is really good.
I have a bunch of vegan recipes on my website also www.cnyyogacenter.com -

Re: Wheat free banana bread?
Mon, May 24, 2004 - 4:27 PMI did 'em with barley flour, non-hydrogenated margarine, and turbinado sugar. I made 12 muffins, and baked for about 22 minutes. I was worried that the turbinado sugar would make them too dry, but they seem just fine.
I think I need to go buy some more bananas. Mmmmm... nanner muffins. Thanks!

Re: Wheat free banana bread?
Thu, May 20, 2004 - 12:20 PMWell, the last batch of bananas was smoothi-ified already. But I went out yesterday and bought some barley flour and too many bananas, so maybe there will be some bread this weekend. Yay! (That is, if I can stop eating the bananas...)
