Wheat free banana bread?

I seem to have gotten overzealous in the banana department. I have 4 bananas screaming to be made into bread, and no vegan banana bread recipes. Any favorite nominations?

    i picked a simple non-vegan banana bread recipe from the internet (no idea which one anymore, there are thousands out there), then just substituted ground flax seed for egg and soy for milk, and it was excellent.

    her is my favorite banana bread recipe. You can also make it in to muffins if you would like too.

    2 Cups flour
    1 1/2 tsp baking powder
    1/2 tsp baking soda

    cream together

    1/3 cup maragarine
    3/4 cup brown sugar

    Beat

    1 cup bananas

    mix

    3 Tbsp soymilk
    1 tsp vanilla

    add liquids to bananas then stir in flour. oven 350 bake 45 - 50 minutes in a oiled pan.

    So you can use variations like adding chopped walnuts is good or chocolate chips and make monkey bread or muffins. If you are into the real healthy stuff I have used the nonhydrogenated margarines and sugar replacer like sucanat or organic brown sugars ,date sugar is really good.

      I did 'em with barley flour, non-hydrogenated margarine, and turbinado sugar. I made 12 muffins, and baked for about 22 minutes. I was worried that the turbinado sugar would make them too dry, but they seem just fine.

      I think I need to go buy some more bananas. Mmmmm... nanner muffins. Thanks!
