I've been paying attention to lists of what to have in a well-stocked pantry - that is, items that can hang around a long time, not needing refrigeration, ready for cooking when you have surprise guests. These tend to be general lists, and as such include meat, dairy and other items that vegans generally agree not to use. At the same time, we tend to cook with ingredients not used frequently in mainstream cooking. With these differences, the question comes to mind:
What belongs in a well-stocked vegan pantry?
I'll start by listing three (as a long list kills the thread almost before it's born; and I'm a bit impatient to list just one ingredient at a time ):
Whole wheat pasta
Canned tomatoes
Corn meal

Fri, April 14, 2006 - 11:22 AMI second the rice! A meal I tend to make when I don't have much of a plan is rice, lentils, and whatever spices go with the veggies I have on hand, that I started making from this basic recipe: vegweb.com/index.php
We also typically have nutritional yeast, nuts, tofu in aseptic packages, as well as canned tomatoes and beans.

rice, italian pasta, cous cous and cans of tomatoes yes. a variety of delicious nuts, like walnuts and pecans and cashews and almonds. -

Sesame oil
Maple syrup (in the fridge)
Apple Cider Vinegar (also in the fridge)
Rice Vinegar
Gluten flour (for seitan)
Whole wheat and white flour
Dates
Other dried fruits (apricots, figs, etc)
Vegan sugar (or fructose)
Cocoa powder
Baking soda
Baking powder
Egg replacer
Flax meal (sprouted flax meal is the best)
Rolled Oats
Oat bran
Vegan chocolate chips (for the late night need for chocolate chip cookies! ;-)
TVP (chunks and granules)
Algae (Arame, Wakame, Dulse and of course Nori sheets (for the late night maki to go with the chocolate chip cookies! ;-)
Grass Jelly or agar agar or both
Dried Coconut
Seeds (sunflower, sesame, poppy)
Corn Starch
Sea salt
Spices and herbs (absolute necessity: Basil, Oregano, Sage, Dill weed, Black pepper, Parsley, Coriander, Cloves, Cumin, Turmeric, Cinnamon, Allspice, Nutmeg, Rosemary, Thyme)
everything else I think was covered on previous posts
