I'll start it out.. forgive me, I never use recipes but I'll estimate.
Thai green curry soup
Start with
1 15oz can coconut milk
1 lb extra firm tofu, drained and cubed
1 cup cooked rice
1 tbsp (I use 3, but beware your chili potency) of green thai curry :
- (either use the OTC paste or grind 2 seeded thai peppers, 1 stalk of lemongrass, 1 clove of garlic and 1/4 tsp (1g) galangal)
Add enough full strength brown soup stock to comfortably cover so the tofu almost floats
Simmer for maybe 10 mins, stirring frequently
Add 1/4 cup lime juice, an entire bundle of chopped cilantro, and 3 scallions, finely diced.
Eat
Add a half pound of sliced shiitake if you want
